Summary:An experiment was conducted on sweet corn to determine the effect of precooling time and storage durations on the postharvest quality characteristic of sweet corn. Freshly harvested mature sweet corn were precooled at 10, 15, 20 and 25 min cooling time using ice cube and stored at 5 degreeC for 3, 6, 9 and 12 days. Sample zero cooling time (control treatment) was only cleaned up before storage. Only sweet corn which were well-formed and free of blemishes were selected for the experiment. The experimental design used was RCBD with factorial arrangement of treatments (5 cooling time x 5 storage durations) with two blocks and five sweet corn for each replication. The results indicated that cooling time x storage duration affected weight loss, soluble concentartion (SSC) and assorbic acid. However, the treatment did not significantly effect titratable acidity and pH. There were significant quadratic relationship between weight loss and storage duration of cooling time 0 min, cooling time 10 min and cooling time 15 min. The quadratic relationship indicated that the weight loss increased with increasing storage duration and was lowest when sweet corn was precooled at cooling time 10 min and CT 15 compared to other. Accumulation of soluble solids concentration (SSC) in sweet corn was highest (12.5%) at cooling time 10 min compared to other cooling time after storage for 12 days. Ascorbic acid in sweet corn was found lowest in sweet corn precooled at cooling time 25 min compared to sweet corn non precooled and stored for 12 days. Results of this research could be used to recommend the precooling and storage duration of sweet corn.
