The main objective is to measure the dielectric constant and dielectric loss factor of virgin coconut oil and virgin coconut oil dilute with distilled water. Virgin coconut oil is measured at various moisture contents and is diluted with distilled water. The measurements are made at frequency range from 5Hz to 10MHz using dielectric spectrometer (HP 4192A Impedance Analyzer). The HP 4192A Impedance Analyzer was used to measure the dielectric constant ε' and dielectric loss factor ε". The computer controller was used to initiate the software to obtain the data. In general, the results show that dielectric constant ε' and dielectric loss factor ε" decreases with increasing frequency. All results show different negative gradient. Dielectric constant ε' decreases as increasing the moisture content and has no significant change in ε' after 20% of virgin coconut oil moisture.
