Summary:A mathematical model describing the glycerolysis of palm olein with Lipozyme TL IM was constructed. Three models were study, i.e. simple ternary model, simple ping-pong bi bi model and complex ping pong bi bi model. The models were based on Michaelis-Menten mechanism. Inhibition was not considered in these models. The kinetic constants were estimated using unsteady-state assumption where individual kinetic constant of forward and backward reaction was considered. The best fitted model was complex ping-pong bi bi model. This model could be used for predicting the appropriate conditions for the efficient production of the desired product.
