The blooming of food technology industries in current years has led to utilisation of seaweeds as prebiotics. Prebiotics act as a food supplement to probiotics in human colonic system which later result in short chain fatty acids (SCFAs) production. The research aiming to evaluate the SCFA production from the in-vitro fermentation of red seaweeds obtained from Sabah and Langkawi. The fermentation was conducted using pH batch culture system that mimicked the distol colon of large intestine of human. There were four treatments involved : positive control, red seaweed (Sabah), red seaweed (Langkawi), and negative control with two replications. The result showed no significant differerent between substrates and also between hours for all treatments and replications. The research later discuss about the occurence of SCFAs and carbohydrates metabolism which SCFAs promoting health of the host.
